🍉Ingredients (4 servings):
Red & orange peppers 2
Sliced black olives 100ml
Celery 2 stalks
Black beans 270g
Red kidney beans 300g
Tofu 350g
Corn niblets 270g
Cilantro some
Whole wheat tortilla wraps 4x64g
Hummus 1 cup
🍉Steps:
1. Cut celery and peppers into strips
2. In a heated pan, stir fry black beans, corns and tofu, flavour to your preference. I added black pepper, salt and olive oil. Remove from heat
3. On a large whole wheat tortilla wrap, spread the hummus evenly on top
4. Add onto the orange and red peppers, celery, black olives, tofu black beans stir-fry, red kidney beans, and some cilantro
5. Wrap it up and cut in half to serve
6. (Optional) you can also grill it with vegan cheese to add in extra flavour and taste
