🍉Ingredients (serving: 45 mini muffins)
3 1/3 cup non dairy milk (I used soymilk)
3 flax egg (ground flax seeds:water=3:6 tbsp)
1 cup dates
1/8 cup maple syrup
5/8 cup oil (I used olive oil)
4 cup whole wheat flour
7 tsp baking powder
1/8 tsp salt
2 cup blueberries

🍉Steps:
1. Preheat oven to 350 degrees
2. Prepare flax egg and set aside to sit for 10 minutes
3. In a large bowl combine flour, baking powder and salt
4. Blend dates with some soymilk to paste
5. In another bowl, combine soy milk, dates, maple syrup, olive oil, and flax egg.
6. Pour wet mixture into dry ingredients and stir just to combine. 
7. Add blueberries and gently fold them in to batter
8. Scoop batter into prepared muffin pan and bake for 22 minutes or until muffins are lightly golden in color
9. Cool completely. Enjoy 😋
