🌈Ingredients (Servings: 8):

 

2 carrots, chopped

2 potatoes, chopped

1/2 turnip, chopped

6 medium sized tomatoes, diced

3 tsp cumin powder

3 tsp coriander powder

2 tsp turmeric powder

1 tsp curry powder (optional)

Pinch of cayenne pepper (optional)

1 cup of yellow lentils

2 cup of red lentils

3 cups water 

1 tsp black pepper

1 tsp salt

1 ginger, minced

2 cup fresh green leafy vegetables, chopped

 

🌈Steps:

1. Wash the vegetables properly and chop them into chunks and pieces

2. In the Instant Pot, combine the carrots, potatoes, turnip, tomatoes, cumin powder, coriander powder, lentils, water, black pepper and salt. Stir well to combine.

3. Secure the lid and move the steam release valve to Sealing. Use the Pressure Cook button to cook for 10 minutes at high pressure. 

4. When the cooking cycle is complete, allow the pressure to naturally release. When the floating valve drops, it's safe to remove the lid.

5. Stir the soup well to make sure the lentils and vegetables are tender, then season to taste if needed. Enjoy! 😋
