豆類食物裡面有一種長的很可愛又很營養的食材,堪稱是素食者的聖品,叫做鷹嘴豆!❤️

鷹嘴豆富含蛋白質、維他命、礦物質和纖維質。有幫助消化、預防多種疾病及幫助控制體重的功效。

西洋餐廳裡有一個很特別的菜餚,鷹嘴豆丸子,基本上主要成分就是鷹嘴豆。歷史上是從中東,地中海附近起源。它吃起來紮實香軟,因為有香菜香味所以不會有豆味在裡面。西洋餐廳裡面喜歡跟沙拉、麵包塊、黑橄欖、蕃茄或皮塔餅等一起上菜。其清爽不膩的口感很適合夏天食用。

🥦夏日地中海風情鷹嘴豆丸子(全素)(33顆)

🍉食材:
鷹嘴豆罐頭 (570克)或是泡軟的鷹嘴豆
1/2 cup 腰果
1 1/2cup 香菜片
1 1/2 tbsp 小茴香
2 tsp 鹽
6 tbsp 麵粉

🍉步驟:
🌟1.在食品攪拌機中,加入腰果。通過連續暫停幾次將其稍微打碎 
🌟2.加入鷹嘴豆,香芹片,小茴香和鹽。通過連續暫停幾次將它們打碎 
🌟3.加入麵粉。將它們充分混合,直到變成有些微顆粒的麵團(不要打太久成糊狀或粘稠狀) 
🌟4.每次使用約2湯匙來捏塑成一個球狀。輕輕將其按扁一些些
🌟5. 選項(a)用鍋子煎至兩面都變成金黃色 
選項(b)將烤箱預熱至350度,烤10分鐘,然後翻面。再烤10分鐘 
🌟6.準備好上菜了。請享用! 😋 

我在沙拉中使用以下材料:生菜,黃瓜,西紅柿,黑橄欖,麵包屑和純素食蜂蜜芥末醬。 

我在外加的配菜中使用以下食材:玉米,黑豆和硬豆腐。 

 

 

🥦Summer Mediterranean Dreams Falafels (Vegan)

There is a cute looking yet nutritious type of beans, which is very good for vegetarians and vegans, called chickpeas!❤️

Chickpeas are rich in protein, vitamins, minerals and fiber. It can also help improve digestion, prevent various diseases and assist in weight control. 

This amazing food, falafels, served in many Western restaurants, are basically made up of chickpeas. It is originated from the Middle East and the Mediterranean Sea area. It tastes solid yet soft, because of the natural aroma from parsley, you wouldn't taste the bean smell in it. Western restaurants like to serve it with salads, bread crumbs, black olives, tomatoes or pita bread. Its refreshing and non-greasy taste is just perfect in summer.

Ingredients (33 falafels):
Canned chick peas (570g) or soaked chickpeas
1/2 cup cashews
1 1/2 cup parsley flakes
1 1/2 tbsp cumin
2 tsp salt
6 tbsp all purpose flour

🍉Steps:
🌟1. In a food processor, add in cashews. Blend them while pausing intermittently
🌟2. Add in chickpeas, parsley flakes, cumin and salt. Blend and pause intermittently
🌟3. Add in flour. Blend them well until it becomes a crumbly dough (not too smooth, pasty or sticky)
🌟4. Use about 2 tbsp to shape a ball at a time. Slightly press it to a disk
🌟5. 
Option (a)Pan fry until golden brown on both sides
Option (b) preheat oven to 350 degrees, bake for 10 minutes, flip them. Bake for another 10 minutes
🌟6. They are ready to be served. Enjoy! 😋

I use the following in my side salad: romaine lettuce, cucumbers, tomatoes, black olives, bread crumbs and vegan honey mustard dressing.

I use the following for my optional side dish: corns, black beans and firm tofu.
