記得小時候爸爸帶我們全家出國玩,每天除了期待精彩的行程外,自助早餐中鬆鬆軟軟的鬆餅加上楓糖漿總是令人難忘。🍁
 
姊夫, uncle K,每一陣子就會跟孩子們預告明天要做鬆餅,孩子們總會一早興奮的衝去餐廳就為了這個香香軟軟的鬆餅! 全素沒了蛋奶要怎麼做出一樣的好滋味呢? 現在就來瞧瞧:😉
 
🥦[Uncle K鬆軟香香鬆餅(全素)]
 
🍉材料 (4人份): 
一杯低筋面粉(125克)
1Tbsp  發酵粉
1 Tbsp 糖 
1/4 tsp 鹽
1 tsp 杏仁香精(也可以是香草精)
1 Tbsp 蘋果醋
1杯 豆漿或杏仁奶(250cc) 
楓糖漿 (吃的時候要加的)
 
🍉步驟:
1. 在一個中等大小的碗中,加入麵粉,糖,鹽及發酵粉,攪拌均勻 
 
2.  在一個中等碗或量杯中,加入豆奶或杏仁奶,杏仁香精及蘋果醋,攪拌均勻後將混合物倒入麵粉混合物中,攪拌直到混合均勻
 
3. 讓麵糊靜置5分鐘
 
4. 用中火將麵糊倒入不粘鍋或煎鍋中
 
5. 當上面開始起泡呈金黃色澤時,翻轉煎餅並煎到金黃色
 
6. 配上楓糖漿就完成啦,也可以加上水果切片一起吃哦!🍓
 
這個簡單的食譜也可以輕鬆的變化加入別的食材,像是香蕉、草莓、藍莓、巧克力碎片或杏仁碎片等等,可以在步驟4加入鍋子中,風味更加哦!❤
 
 
🥦Uncle K's Fluffy Pancakes (Vegan)
 
I remember when I was a kid, my Dad took us abroad for our family trips. Besides the fun and exciting adventures, these fluffy muffins with maple syrup 🍁on top in the breakfast buffet are always something that I looked forward to during the trips every single day. 
 
My brother-in-law, uncle K, from time to time would make these wonderful fluffy pancakes. The kids would always rush to the dining room first thing in the morning on the days when they are served. How do we make these tasty pancakes vegan (no eggs no dairy)? Let's take a look now: 😉
 
🍉Ingredients (4 servings): 
1 cup flour (125 g) 
1Tbsp baking powder 
1 Tbsp sugar 
1/4 tsp salt 
1 tsp almond extract (can also be vanilla extract) 
1 Tbsp apple cider vinegar 
1 cup soy or almond milk (250cc) 
Maple syrup to be added when served
 
🍉Steps: 
1. In a medium bowl, put in flour, sugar, salt and baking powder and mix well 
 
2. In a medium bowl or cup, add in soy milk or almond milk, almond extract and apple cider vinegar, stir well. Then pour the mixture into the flour mixture, stir until well mixed 
 
3. Let the batter sit for 5 minutes 
 
4. Pour the batter into a non-stick or frying pan over medium heat 
 
5. When see the bubbling starting on top and color turning golden, flip the pancake and fry until golden 
 
6. When ready, served with maple syrup. You can also eat with fruits!🍓
 
This simple recipe can also be easily modified to include other ingredients, such as bananas, strawberries, blueberries, almond flakes or chocolate chips in step 4 above. Enjoy!❤
