🥦 Ingredients (Servings: 8 inch/4 cake layers/10-12 people)
➡️Cake body:
Cake flour 4 cup
Baking powder 12 tsp
Unsweetened soy milk 1 1/2 cup
100% pure Canadian maple syrup 1 cup
Oil 1 1/3 cup
Lemon juice 4 tsp
Vanilla extract 1 tsp
A pinch of salt

➡️Taro filling:
Taro (steamed) medium size one
100% pure Canadian maple syrup 1/3 cup
Unsweetened soy milk 2 tbsp

➡️Vegan whipped cream icing:
Earth Balance vegan butter (softened to room temperature) 1 cup
Icing sugar 2 cups
Coconut cream 40g
Organic natural purple sweet potato powder (for purple icing) 1-2 tsp
Rosemary flowers (fresh, for garnish)

🍓Steps:
1. Steam the taro chunks and set aside for use later.

2. Preheat the oven to 350F degrees. In a large bowl, mix all the dry ingredients (cake flour, baking powder, salt) and wet ingredients (maple syrup, unsweetened soy milk, oil, vanilla extract, and lemon juice). Beat with a hand-held electric mixer until there's no lump.

3. Divide and pour the mixture evenly into two 8-inch round baking pans. Bake in the oven for 35 minutes.

4. Taro filling: Add in unsweetened soy milk and maple syrup to taro, and beat it with a hand-held electric blender until it is fine and smooth.

5. Bring the cake out of the oven and let cool for half an hour. Cut the top flat, and cut each eight-inch cake into two layers (so there are four layers in total)

6. Wash the fresh purple rosemary flowers for decoration purpose later.

7. When making the icing, use a hand-held electric mixer to beat the vegan butter, icing powder and coconut cream well, and stir until it looks light and fluffy. Do not over-stir.

8. Purple icing: I use organic natural purple sweet potato powder mixed with white icing for a romantic lavender coloring. Put it in a pastry bag and set aside for use.

9. On a cake turntable, place the first layer of cake. Then evenly spread the taro filling on top. Repeat it for the second and third layers of the cake. Place the top layer of the cake. Spread the white icing evenly on the top of the cake and around the cake by turning the cake turntable. 

10. Decorate the top and sides of the cake with romantic purple frosting. Then sprinkle the purple rosemary flowers in the centre with a heart-shape cutter.

11. Chill the cake in the refrigerator for 30 minutes. Bon appetit😋
